1. Batter:

1.1. Place into a kitchen mixer with whisk attachment:

3 large eggs
¾ cup of granulated sugar

Whip on high speed until it reaches a creamy but still slightly runny texture (about 2 – 3 minutes).

1.2. Add:

1 stick (¼ LB) of butter – melted

And whip for an additional 2 minutes.

1.3. Add:

2 cups of all-purpose flour
2 TSP of baking powder
2 cups of milk – whole (or another kind of milk)
1 TSP of vanilla extract

Process at slow speed until partially combined.

1.4.

Increase the speed to high and whip until fully combined (about 30 seconds to 1 minute).

2. Cooking:

Note:
This recipe is primarily designed for Belgian waffle makers, which have a hinge that allows them to rotate and flip upside down after closing. However, it can also be prepared with a regular waffle maker that doesn’t flip. In this case, simply omit the flipping step and extend the cooking time as needed.

2.1.

First, preheat the frying iron to a high temperature.

2.2. Then open the waffle maker and pour one full ladle of batter in when preheated.

Important:
If your waffle maker doesn’t have a non-stick surface, start by brushing the inner parts of the waffle maker with frying oil first (use a silicone brush) or, optionally, using oil in spray.

2.3.

Right after you pour your batter in, close the waffle maker and flip it (rotate the waffle maker irons so that the bottom waffle maker iron faces up and up one face is down).

2.4. Let cook for about until the bottom part of the waffle turns to an appetizing lightly brown (usually takes just about 1 – 2 minutes).

Important:
To verify that the bottom turns to an appetizing brown color, open the waffle maker, and use a thong, gently lift it up to peek under to verify.

2.5.

When the bottom part of the waffle turns to an appetizing lightly brown color, rotate the wafer maker to the opposite position (ensure it is safely closed first).

2.6.

Then let cook until the other side of the waffle turns to an appetizing light brown color (about 1 – 2 minutes).

2.7.

Carefully place on the plate using thongs and repeat with the remaining batter.

3. Assemble & Serve:

Top with a topping of your choice.

3.2.

Sprinkle with powdered sugar and optionally top with whipped cream.

Tips:

  • If you have leftover non-topped waffles, place them in a sealed freezer bag.
  • You can store them in the refrigerator for up to one week or freeze them for up to six months—make sure they are completely cooled before doing so.
  • If refrigerated, before serving (and adding toppings), place them on a plate and microwave each one for 10 seconds.
  • If frozen, allow them to defrost first, then treat them as if they were refrigerated.
