A block of silken tofu and a few ingredients you likely already have on hand make a quick vegan version of kewpie style mayo. This mayo base is great drizzled over sushi bowls and can also be used to make spicy mayo.
1. Blend the ingredients to prepare vegan Kewpie-style mayo:
Place all of the ingredients in a blender:
12 OZ of silken tofu
1 ¼ TBSP of lemon juice
1 ½ TBSP of rice vinegar
1 TSP of granulated sugar
½ TSP of salt
Blend until smooth and creamy.
