Ingredients:

Directions:

1. Fish preparation:

1.1.

Make sure that the fish fillets are properly rinsed under cold water.

1.2.

Place fish fillets on a plate.

1.3.

Pour and sprinkle these ingredients on both sides of each fillet (each side should have about 1/4 of the ingredients shown; adjust if needed):

Squeeze lemon and pour olive oil.

1.3.2.

Optionally sprinkle with herbs of your choice.

1.3.3.

Generously salt and pepper.

1.4.

Set aside for an upcoming cooking.

Meat & Fish Preparation

Correct preparation of meat and fish should be regular step for any cook. Basically, preparation starts with a thorough rinsing followed by the removal of unwanted parts to the portioning of the meat and fish (the exception to these rules would be ground meat). The major focus of this section is to explain the basic methods on already cut portions.

2. Pan sear & finish in the oven:

2.1.

Set oven to prehat to 350°F.

2.2.

Preheat a fry pan on high heat with 2 TBSP of frying oil.

2.3.

Briefly sear from one side to reach a nice sear (about 1 – 2 minutes).

2.4. Turn and add:

½ cup of white wine

Cook until the wine is reduced to about half (about 1-2 minutes).

2.5. Then evenly pour over:

1 cup of heavy cream
Liquid from the marinade

Finish in a preheated oven until the fish is fully cooked (about 2 – 3 minutes). *

3. Sauce finishing:

3.1.

Remove sauce from the sauce and place it on high heat to reduce – cook sauce with a stirring until you reduce it to the consistency that you prefer (I cook it usually for about 1 minute).

4. Plate & serve:

4.1.

Place fish on the plate.

4.2.

Pour the sauce over the fish and sprinkle with salt and pepper.

4.3.

Serve with your favorite side.

* Check with a food thermometer to make sure that you have reached the minimum recommended safe serving temperature for fish of 145°F.
