Directions:

1. Preheat the oven:

Preheat the oven to 350°F.

2. Prepare the mixture:

In a bowl, stir together the pepitas, maple syrup, toasted sesame oil, tamari, and Japanese shichimi togarashi (Japanese seven spice Seasoning).

3. Bake the pepitas:

Spread the mixture evenly across a baking sheet lined with parchment paper or a silicone mat. Bake for 20 minutes, stirring occasionally. The pepitas should snap apart. If they remain a little sticky, continue to bake, checking every 2 minutes.

4. Serving:

Allow pepitas to cool completely before breaking apart. Store tightly covered at room temperature.
