Directions:

1. Soup base:

1.1. Preheat the saute pan on medium-high heat with 4 TBSP of frying oil and add:

½ LB of chorizo – crumbled or sliced

Sauté for about 2 – 3 minutes with occasional stirring.

1.2. Then add:

1 TSP of whole caraway seeds

Sauté for 1 minute with occasional stirring.

1.3. Add:

1 medium onion – chopped

Sauté for 2 minutes with occasional stirring.

1.4. Add:

3 cloves of garlic – minced

Sautéé for about 1 minute with occasional stirring.

1.5. Then dust with:

½ TBSP of paprika

Thoroughly stir.

1.6. Then dust with:

2 TBSP of all-purpose flour

And thoroughly stir until flour evenly coats all the ingredients.

1.7. Add:

2 cups of chicken stock (part of the total amount)

Thoroughly stir until fully incorporated.

1.8. Add:

1 TSP of salt
3 bay leaves

Cook with constant stirring until the soup base thickens (usually about 1 – 3 minutes).

2. Set the soup to cook:

2.1.

Transfer the soup base to the pot.

2.2. Add:

½ TSP of whole peppercorn
4 cups of chicken stock (remaining amount)

Thoroughly stir.

2.3. And:

1 LB of sauerkraut – drained

Thoroughly stir.

2.4.

Cover with a lid and cook on medium-low heat for about 1 hour with occasional stirring.

3. Potatoes:

3.1.

Meanwhile, cook 2 peeled and diced potatoes in the water with salt and caraway until soft (make sure that potatoes are fully immersed and have about 1/2” of water above them.

3.2.

Shortly before the soup has finished cooking for 60 minutes, add the potatoes, including the water, to the soup and stir thoroughly.

4. Finalize:

Cook for another 10 minutes with occasional stirring (this time without lid).

4.2.

Before you terminate cooking, taste and add salt and pepper if needed.

5. Plate and Serve:

5.1.

Scoop soup into individual bowls.

5.2.

Decorate with sour cream and chopped parsley.

5.3.

Serve with bread of any kind.
