1. Boil the Potatoes:

  • Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.

  • Add the baby potatoes and cook until fork-tender, about 15-20 minutes.
  • Drain and allow to cool slightly.

2. Smash the Potatoes:

  • Once the potatoes are cool enough to handle, place them on the prepared baking tray.
  • Using a potato masher or fork, gently press each potato until it flattens slightly, but is still intact.
  • Leave a bit of space between each potato.

3. Season & Prep:

  • Drizzle olive oil generously over the smashed potatoes.
  • Add a squeeze of fresh lemon juice, then sprinkle chopped rosemary, salt, and pepper on top.
  • Gently rub the potatoes with your hands or a basting brush to ensure all sides are well-coated with oil and seasoning.

4. Bake to Crispy Perfection:

  • Transfer the baking tray to the preheated oven.
  • Bake the potatoes for 25-30 minutes, or until golden brown and crispy around the edges.

5. Serve:
