Directions:

1. Set oven.

Set oven to preheat to 400 degrees.

2. Prep beets

Wash your beets under water.

Peel beets skin with a peeler.

3. Cut beets.

Using a chef’s knife, slice the beets in to thin, chip-like slices.

4. Prep baking sheets.

4.2 Place beets on the baking sheet with parchment paper:

  • Place sliced beets on the baking sheet.
  • Spread every around, make sure they are touching.

Lightly drizzle olive oil over the beets.

Season the beets with salt and pepper.

5. Roast beets:

Roast the beets in the oven for 30 minutes or until they are cooked through and slightly crispy.
