In a large mixing bowl, combine the almond flour, brown rice flour, and powdered sugar.

3. Whisk the Egg Whites:

In a separate bowl, whisk the egg whites until they become frothy and light

4. Combine the Mixtures:

Gently stir the whisked egg whites into the dry mixture until well combined.

5. Add Butter and Vanilla:

Fold in the melted butter and vanilla extract into the batter, mixing gently until smooth.

6. Fill the Molds:

Pour the batter into the greased friand molds or muffin tin, filling each halfway.

7. Top with Raspberries:

Place 2-3 fresh raspberries on top of each friand.

8. Bake:

Bake for 20-25 minutes or until the friands are golden brown and firm to the touch.

9. Cool and Serve:

  • Let the friands cool slightly before removing them from the molds.
  • For an extra touch, sprinkle them with powdered sugar before serving.
