Ingredients:

Pork Chop

Marinade

Mango Salsa

Cilantro Rice

Directions:

1. Pork Chop Prep

1.1.

Rinse Pork.

1.2.

Trim any fat from sides.

1.3.

Cut into Bite size pieces.

2. Marinade

2.1.

Place all the ingredients into a Blender and blend until smooth.

2.2.

Put into a container with cut up pork , or into a large zip lock bag.

2.3.

Let this marinade for 4 hrs do not go too long as the citrus will tenderise the meat too much.

3. Prepare the Mango and tomato Salsa

Combine all the ingredients into a bowl, mix well, add salt and pepper to taste.

Note:
Don’t be afraid to taste this, rememeber to add salt slowly as you can always add more salt later but cannot take salt away if you add too much.

4. Cilantro Lime Rice

Cook Rice:

4.1.1

Combine 1 Cup Rice and 2 Cup Water in a pan with lid, bring to a boil, then reduce to a slow simmer.

4.1.2.

Cook rice for 15 minutes. once done fluff with a fork.

4.2.

Now add Juice from one lime and little of the chopped Cilantro and mix throughly.

5 Sautee Pork

5.1 Heat Pan:

Heat pan and oil on HIGH heat.

5.2 Sautee Pork:

Put pork in pan and Sautee pork until cooked.

6. Plating:

Spoon Rice into bowl or on a plate, top with pork, then mango salsa, can sprinkle cilantro on top.
