1. Dough for Poori Bread Recipe:

Let’s start with the preparation of Poori bread recipe.

1.1. Place into a large mixing bowl:

2 cups of whole wheat flour
1 ½ TSP of vegetable oil
¾ cup of water
½ TSP of salt

Knead by hand until a stiff and tight dough is formed (about 4 – 5 minutes).

Important:
If you over-knead the dough, the dough will have a more elastic consistency and will absorb the oil during frying instead of puffing.

2. Oil Prepration:

2.1.

Set your oil to preheat at 350°F.

3. Shaping of Poori Bread:

3.1.

Working on a surface (countertop) that is not floured, separate the dough into 6 even pieces using a dough scraper, and then roll each piece into balls.

3.2.

Set the balls aside on a plate and smear them with the extra oil using a pastry brush.

3.3. Each ball will flatten with a rolling pin right before frying. Do not flatten all balls at once since they will start drying. To prevent sticking, use extra vegetable oil instead of flour. Flatten them into round disks with an even thickness of about 1/8”.

Thicker ones or thinner ones may result in a failure to puff).

Deep Frying

Deep frying is a very popular cooking method. Unfortunately, it is also considered unhealthy since deep fried food represents higher calorie intake when compared to non-fried food. With frequent consumption it can lead to unwanted weight gain. Even though deep frying sounds for some people almost scary, it is simply submerging food in hot oil which leads to instantly cooking the surface while moisture is trapped in the food and keeps cooking the food from the inside.

4. Deep Fry:

4.1. Make sure that the oil is preheated to 350°F.

Note:
Prepare each bread one by one.

4.2.

Carefully place by hand, each flattened bread into the hot oil.

4.3.

When the bread has risen almost to the surface (which takes about 10 – 20 seconds), use a skimmer to press the bread back under the level of oil – this will help the bread to puff. Hold at least 1 – 2 minutes under the oil level.

4.4.

Then, turn the bread to the other side.

4.5.

Fry until it turns golden brown (about 2 – 3 minutes).

4.6.

When done, remove to a cooling rack and prepare another poori bread from the freshly flattened round disk.

5. Serve Poori Bread and Enjoy:

Serve Poori Bread with any Indian meal or any curry.
