1. Prepare Pesto Recipe:

Let’s prepare the pesto recipe.

1.1. Place into your kitchen food processor:

2 cups of fresh basil leaves
½ cup of pine nuts
1 clove of garlic – whole
¾ cup of Extra Virgin Olive Oil
¼ TSP of salt
¼ TSP of ground pepper

Process on high speed until smooth (about 3 – 4 minutes).

½ cup of grated parmesan

Process until all ingredients are thoroughly incorporated (about 1 – 2 minutes).

Taste and add olive oil, salt or pepper if needed.

Place in clean small jars (no bigger than 4 oz) and add an extra layer of olive oil (about ¼ inch) on top of the pesto in each jar.

For best results, let the pesto rest for at least one day in the refrigerator.
