To prevent undercooked eating eggs, avoid any kind of egg prepared with a partially or fully runny yolk. To avoid the risk of salmonella, use pasteurized eggs only.

1. Common preparation:

To make preparation easier, crack the egg into a small bowl before placing it into a pan.

1.2.

Preheat the fry pan on medium heat with 1 TBSP of frying oil and 1 TBSP of butter.

1.3.

Carefully place an egg on the pan (try to prevent breaking the yolk).

1.4.

When the bottom of the egg is almost done (most of the white is solid), flip the egg yolk-side down and keep cooking until you reach your desired consistency:

Over-easy egg preparation:

Over-easy eggs will need to be cooked for about 10 – 15 seconds after flipping to get a fully runny yolk with a slight white film from the egg whites.

Over-medium egg preparation:

Over-medium eggs will need to be cooked for about 30 seconds after flipping to get a yolk that is mostly solid but partially runny.

Over-medium egg

Over-hard egg preparation:

Over-hard eggs will need to be cooked for 1 minute or longer after flipping to get a fully cooked (hard) yolk.
