Ingredients:

Kabobs:

  • 2 LB of pork loin - cut into 1 ½ inch pieces
  • 1 onion - peeled and cut into lengthwise should be 8 wedge pieces (any kind)
  • 1 TSP of oregano - dried
  • ½ TSP of salt
  • ½ TSP of ground pepper - ideally freshly ground

1. Get Started:

Let’s begin preparation of Grilled Pork Kabobs with Tzatziki.

  • Preheat grill to medium-high heat.

2. Make the Skewers:

  • In a large bowl, toss the pork cubes and onion pieces with 1 ½ Tbsp olive oil.
  • Season generously with oregano, salt, and pepper.
  • Thread the pork and onions onto skewers, alternating meat and onion pieces.
  • Set asside for the upcoming grilling.

3. Prepare Tzatziki Salad:

  • Peel and shred the English cucumbers. Then, squeeze out excess liquid using your hands or a cheesecloth to prevent a watery tzatziki.
  • In a bowl, mix the shredded cucumber with the Greek yogurt, grated garlic, dried mint, salt, and pepper. Adjust the salt and pepper to your taste.

4. Grill the Skewers:

  • Place skewers on the preheated grill.
  • Grill, turning occasionally, until lightly charred and the pork is cooked through (8 – 10 minutes). *

5. Prepare the Flatbread:

  • Brush tortillas or naan bread with olive oil.
  • Sprinkle with salt.
  • Grill for about 2 – 5 minutes, until lightly browned.

6. Serve Grilled Pork Kabob with Tzatziki:

  • Serve the grilled pork skewers immediately with the toasted flatbread and tzatziki sauce.
