1. Preheat oven and prep green beans:

  • Preheat oven to 350° F (175° C).
  • Bring a large pot of salted water to a boil.
  • Add green beans and cook for 3-4 minutes, until crisp-tender.
  • Drain and immediately plunge into ice water to stop the cooking process.
  • Once cool, drain again and set aside.

2. Sauté vegetables:

  • Heat oil in a large fry panover medium heat.
  • Add mushrooms and onion and cook until softened, about 5-7 minutes.
  • Add garlic and cook for 1 minute more.

3. Make the sauce:

  • Melt butter in the skillet.
  • Stir in flour and cook for 1 minute.
  • Gradually whisk in milk and heavy cream until smooth.
  • Bring to a simmer and cook until thickened, stirring occasionally.
  • Season with salt and pepper.

4. Combine and bake:

  • In a 9×13 inch baking dish, combine the green beans, mushroom mixture, and half of the French fried onions.
  • Pour the sauce over the top and stir gently to coat.
  • Sprinkle with the remaining French fried onions.

5. Bake:

Bake in preheated oven for 20-25 minutes, or until heated through and bubbly.

6. Serve:

Serve hot.
