1. Brown the beef:

  • In a large skillet over medium heat, brown the ground beef until cooked through.

2. Sauté the veggies:

  • Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  • If using bell pepper, add it now and cook for a few more minutes.

3. Combine everything in the slow cooker:

  • Transfer the beef and veggie mixture to your slow cooker.
  • Stir in the crushed tomatoes, tomato sauce, beans, chili powder, cumin, paprika, smoke paprika, oregano, cayenne, salt, pepper, and beef broth.

4. Cook low and slow:

  • Cover and cook on low for 6-8 hours, or until the chili has thickened and the flavors have melded.

5. Taste and adjust:

  • Before serving, taste the chili and adjust the seasonings as needed.
  • You might want to add more chili powder, cumin, cayenne, or salt.

6. Serve it up:

  • Ladle the chili into bowls.
