Ingredients:

1. Prepare calamari:

1.1.

Clean and cut the squid into rings.

1.2.

Place the squid rings in 1 cup of buttermilk and let them soak, covered, in the refrigerator for at least 30 minutes to 1 hour.

2. Lemon mayonnaise:

2.1. Place the following ingredients into the blender:

1 large egg
1 TBSP of red wine vinegar
1 TBSP of Dijon Mustard

Blend on high speed until the mixture becomes pale and thick.

2.2.

Then slowly drizzle in ¾ cup of olive oil while blending at medium speed until the mayonnaise reaches your desired consistency.

2.3. Add:

Juice from 1 lemon
Pinch of salt

Shortly process.

2.4. Taste and adjust the seasoning.

Tip: 
If the mayonnaise is too acidic, add a small amount of sugar to balance the flavor.

2.5.

Place it into the refrigerator to settle while you prepare other parts of the meal.

3. Make batter & coat calamari:

3.1. Place the following ingredients into the mixing bowl:

¾ cup of all-purpose flour
1 TSP of garlic powder
1 TSP of paprika
Pinch Salt

Stir thoroughly.

3.2. When ready to cook, toss the squid rings in the flour mixture until evenly coated.

Note:
The residue of the buttermilk is okay and desired.

3.3.

Place the coated squid rings on a plate and let them rest for 5 minutes.

Deep Frying

Deep frying is a very popular cooking method. Unfortunately, it is also considered unhealthy since deep fried food represents higher calorie intake when compared to non-fried food. With frequent consumption it can lead to unwanted weight gain. Even though deep frying sounds for some people almost scary, it is simply submerging food in hot oil which leads to instantly cooking the surface while moisture is trapped in the food and keeps cooking the food from the inside.

4. Fry calamari:

4.1.

Preheat oil in the deep frier or pot to 300°F.

4.2.

Carefully add the coated squid rings to the hot oil and cook for 2 – 3 minutes, or until golden brown and crispy.

4.3.

Remove the calamari from the oil using slotted spoon and drain on a kitchen towel or on the cooling rack.

5. Plate & serve:

5.1.

Serve the crispy calamari rings immediately with the lemon mayonnaise.

5.2.

Optionally, sprinkle the mayonnaise with sumac for a touch of color and flavor.
