1 Chimichurri:

1. Place all ingredients in the small mixing bowl:

¾ cup of Extra Virgine Olive Oil
3 TBSP of red wine vinegar
5 cloves of garlic –  grated or pressed
¼ cup of parsley –finely chopped
2 TBSP of oregano –finely chopped
2 TSP of pepper flakes – crushed
½ TSP of salt
½ TSP of ground pepper

Thoroughly stir with a whisk until nicely combined (about 10 seconds).

Taste and add salt and/or pepper if needed.

3.

Serve your favorite steak, chicken meal, rice meal, or any Mexican dish, including quesadilla.
