  • shallot - fresh and finely chopped
  • chives - fresh and finely chopped
  • parsley - fresh and finely chopped
  • thyme - fresh and finely chopped

1. Chicken preparation:

1.1.

Cut or lightly pound the chicken breasts into thinner pieces so they cook evenly.

1.2. Season both sides of the breasts with:

½ TSP of garlic powder (ammount of all, adjust if needed)
1 TSP of Italian seasoning (ammount of all, adjust if needed)
Kosher salt
pepper – ideally freshly ground

1.3. Preheat saute pan on medium-high heat with 1 TSBP of olive oil:

Cook for about 6 minutes on each side or until cooked through and no longer pink. *

1.4.

Transfer the chicken to a plate then and set aside for a late step.

2. Sauce:

2.1. Return the saute pan to the burner and add:

2 TBSP of unsalted butter

And let it fully melt.

2.2. Add:

1 shallot – finely chopped

Sauté until softened.

2.3. Add:

1 cup of chicken broth/stock
1 package of Boursin cheese – room temperature

Stir and melt the cheese until you have a creamy sauce.

2.4. Add:

½ cup of heavy cream
½ cup of parmesan – grated

Whisk and allow the sauce to heat through and thicken (usually about 5 minutes).

3. Assemble and serve:

Add the chicken back into the skillet and let it warm through for a couple of minutes.

3.2.

Season with salt & pepper if needed and serve over mashed potatoes.

* Check with a food thermometer to make sure that you have reached the minimum recommended safe serving temperature for poultry of 165°F.
