1. Meat Preparation:

Let’s start the preparation of delicious Chicken Parmesan.

1.1.

Make sure that the chicken breasts are properly rinsed under cold water, and the unwanted parts are removed.

1.2.

Cut each chicken breast horizontally in half.

1.3.

Pound the chicken breasts over the plastic film to ½” thickness using a meat mallet.

1.4.

Salt and pepper from both sides.

2. Breading Station for Chicken Parmesan:

2.1.

Place ½ cup of All-Purpose flour on a plate.

2.2. Prepare the egg mixture by placing the following ingredients into a medium mixing bowl:

2 eggs
½ cup of milk
3 cloves of garlic – grated

Whisk together until combined (about 1 minute).

2.3. Prepare Italian breadcrumbs, by placing the following ingredients into the medium mixing bowl:

2/3 cup of breadcrumbs
1/3 cup of grated parmesan
1 TSP of dried parsley
1 TSP of dried oregano
1 TSP of dried basil
½ TSP of salt
½ TSP of ground pepper

Thoroughly stir together using a whisk until fully combined (about 1 minute).

3. Bread Meat:

3.1.

One by one, bread each piece of chicken breast from both sides in this order:

3.1.1.

Flour

3.1.2.

Egg-milk mixture

3.1.3.

Italian breadcrumbs

4. Pan Fry With Finishing In The Oven:

Note: Based on the size of your chicken breasts, you may have to work in batches or use two pans.

4.1.

Set oven to 350°F to preheat.

4.2.

Preheat the fry pan on medium-high heat with 3 TBSP of frying oil .

4.3.

Pan fry the chicken breasts until a nice color of breadcrumbs is reached from one side – but the meat is not fully cooked yet (about 1 – 2 minutes).

4.4.

Turn and immediately cover each piece of chicken breast with ¼ cup of thick marinara sauce and 3 – 4 slices of mozzarella.

4.5.

Place to finish in the preheated oven until the cheese melts and the meat is fully cooked (about 8 -9 minutes). *

5. Serving Chicken Parmesan:

5.1.

Serve on top of the pappardelle with tomato sauce or your favorite side.

5.2.

Sprinkle with grated parmesan and freshly ground salt and pepper.

* Check with a food thermometer to make sure that you have reached the minimum recommended safe serving temperature for poultry of 165°F.
