Meat & Fish Preparation

Correct preparation of meat and fish should be regular step for any cook. Basically, preparation starts with a thorough rinsing followed by the removal of unwanted parts to the portioning of the meat and fish (the exception to these rules would be ground meat). The major focus of this section is to explain the basic methods on already cut portions.

1. Meat preparation:

1.1.

Make sure that the chicken breasts are properly rinsed under cold water and that the unwanted parts are removed.

1.2.

Cut chicken breasts into ¼ thick strips (or any other desired shape) with a sharp knife.

2. Stir fry:

2.1. Preheat fry pan on high heat with 2 TBSP of frying oil and add:

½ LB of chorizo
Chicken breast (prepared in the previous step)
¼ TSP of ground pepper
¼ TSP of salt

Use a wooden spoon to separate the chorizo and meat while stir frying.

2.2.

Then stir fry with occasional stirring until it is fully cooked (about 2 – 3 minutes). *

3. Add to your Mexican meal, salad, and more!

* You should have an easy time determining if the meat is cooked since it is cut into small pieces. If you are not sure by looking, just simply cut a random piece in the middle.
