Ingredients:

Cauliflower

Directions:

1. Preheat the Oven:

  • Preheat your oven to 200°C (400°F).

2. Cook the Cauliflower:

  • Bring a medium saucepan of salted water to a boil.
  • Add the cauliflower florets and cook for 5 minutes until just tender but still firm.
  • Drain well and set aside.

3. Make the Cheese Sauce:

  • In a small saucepan, melt the butter over medium heat.
  • Add the flour and stir continuously for about 1 minute to form a roux (a thick paste).
  • Gradually add the milk, whisking constantly to prevent lumps, until the mixture is smooth and starts to thicken, about 3-4 minutes.

4. Add Seasonings and Cheese:

  • Stir in the mixed herbs, and season with salt and black pepper to taste.
  • Add the grated cheddar cheese and continue to stir until the cheese is fully melted and the sauce is creamy and smooth.

TIP:
Move the pan from the heat when mixing in cheese, this help make it very smooth.

5. Assemble the Dish:

  • Arrange the cooked cauliflower florets in a small baking dish.
  • Pour the cheese sauce evenly over the top, ensuring all the florets are coated.

TIP:
Feel free to add a little extra grated cheddar on top for a golden, cheesy crust.

6. Bake:

  • Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown on top.

7. Serve:

  • Let the cauliflower cheese cool for a few minutes before serving.
  • Enjoy it as a comforting side dish to any meal!
