Ingredients:

Directions:

1. Sauce preparation:

1.1. Place cranberries, rrange zest and juice into a pan and add:

2 TBSP of granulated sugar

1.2.

Bring to a simmer (light boil).

1.3.

Simmer for 10 minutes or until the berries breakdown.

1.4.

Test for sweetness and add more sugar to taste if needed.

1.5.

Remove from the heat and set aside the next step (or cool and store in the refrigerator).

2. Parcels preparation:

2.1.

Roll pastry to ½ cm thickness.

2.2.

Cut into two long rectangles.

2.3.

Trim the rind from the top of the whole Camembert.

2.4.

Place camembert towards one end of the pastry.

2.5.

Top with the cranberry and orange sauce.

2.6.

Add thyme to taste.

2.7.

Fold pastry rectangle over.

2.8.

Trim and use fork to crimp the edges.

2.9.

Whisk the eggs to creat brushing mixuture and then brush mixture all over surface of pastry.

2.10.

Create a few openings to allow heat to escape during baking.

2.11.

Season the top with more thyme.

2.12.

Place in preheated oven at 370F.

2.13.

Bake until pastry has risen and browned (usually about 15 – 20 minutes).
