Lets start prepping our ingredients.

1. Brussel Sprouts:

We need to cut the bottom off and remove some of the outside Leaves, then slice in half. once you are done with them all we need to rinse and let drain.

2. Shallots:

We need to cut the bottom off, peel, then dice into a nice mince, set this aside we will need this later

3. Bacon:

We just need to cut these slices into small 1/2 inch pieces to fry up.

Main cooking:

Now the dish:

1. Cook Bacon:

First lets heat the pan on medium, once it is heated, add the bacon. Seperate the pieces as it cook to make sure all bacon is cooking, cook this to your liking i myself like this nice and crispy. once all the bacon is cooked, remove with slotted spoon into a bowl and sit to side. save some of the bacon grease to cook the Brussel sprouts.

2. Brussel Sprouts:

Now place brussel sprouts into pan with the remainder of bacon grease. flip them so that the flat side is down, and cook until you get some good color don’t over cook. DO NOT burn the shallots.

3. Add Stock:

Add your stock you just want enough to cover about a quarter of the Brussel sprouts. you can add a little water if needed. cook them until tender. if you cook out the stock before they are tender again add some stock or little water.

4. Finish it off:

Now add your Balsamic vinegar and salt and pepper (to taste), mix completly as you want the vinegar to coat the sprouts.  plate and serve.
