Ingredients:

Directions:

1. Sauce base:

1.1. Preheat the saucepan on a medium-high with 2 TBSP of frying oil and add:

1 medium onion – finely chopped

Sauté with occasional stirring until glossy (about 3 – 4 minutes).

1.2. Lower the temperature to medium and add:

2 TBSP of butter
½ cup of brown sugar

While constantly stirring, let caramelize (about 2 minutes).

2. Simmer:

2.1. Add:

1 cup of water
1 cup of ketchup
¼ cup of Apple Cider Vinegar
1 TBSP of Dijon mustard
2 TBSP of Worchester sauce
2 TBSP of smoked paprika
Optionally: 1 TSP of chili powder
Optionally: 1 TSP of Cayenne pepper
¼ TSP of ground pepper
¼ TSP of salt
2 cloves of garlic – grated

Briefly stir and cover with a lid. Bring it to a simmer (about 195°F) with occasional stirring.

2.2. Lower the heat to medium and cook for about 10 minutes with occasional stirring.

Tip:
Add water during simmering to dilute the sauce if the sauce is thickening too much.

3. Finishing phase:

Process until smooth with an immersion blender (while still cooking in the pot). Or, for a really fine texture, pour the sauce into a kitchen processor, and process until smooth for about 3 minutes on high speed (be careful when manipulating the hot sauce and make sure to leave an opening on the top of the kitchen food processor to prevent “explosions”).

3.2. Cook (now without the lid) with occasional stirring until all ingredients are nicely incorporated (about 3 – 5 minutes).

Tip:
If you would like to have your sauce thicker, extend the cooking time for a few minutes until you reach the desired thickness. But keep in mind that the sauce will thicken more after cooling.

3.3.

Taste and add sugar, apple cider vinegar, and salt or pepper if needed.

4. Serve hot or cold.
