Preheat a fry pan on high heat with 2 TBSP of frying oil and add:

1 cup of baby spinach

Sauté while stirring until the spinach reduces its volume (about 1 to 2 minutes).

2. Prepare the spread:

½ cup of mayonnaise
1 TBSP of Extra Virgin Olive Oil
½ cup crumbled feta cheese
¼ cup of grated parmesan
1 cup of artichokes
1 clove of garlic – grated
½ TSP of salt
¼ TSP of ground pepper

Cooled sautéed spinach (from the previous step).

Fold well together with a spatula until nicely combined.

3. Refrigerate overnight for best results (the ingredients will then more completely settle).
