Cloves in the Kitchen: Sweet and Savory
Cloves appear in both whole and ground form in cuisine. Whole cloves have multiple uses – they’re often studded into hams for a festive touch, poked into citrus fruits to create aromatic pomanders, or used to infuse broths, stocks, and braising liquids. Whole cloves can be steeped in hot beverages like mulled wine, mulled cider, or chai tea, where they release their potent flavor and aroma.
Ground cloves are frequently used in baking and are an essential component of beloved spice blends like garam masala and pumpkin pie spice. They add a warm depth to gingerbread, cakes, and sweet breads. In savory dishes, ground cloves complement rich meats like beef or lamb and enhance the flavor of stews, curries, and even certain sauces.
